    • 500g mutton, cleaned and cut into pieces
    • 1 cup yogurt
    • one tablespoon of ginger-garlic paste
    • one teaspoon of turmeric powder
    • one teaspoon of red chili powder
    • Salt to taste

    For the Rice:

    • 2 cups basmati rice immersed in water for 30 minutes
    • 4-5 cups water
    • 1-2 bay leaves
    • 4-5 green cardamom pods
    • 4-5 cloves
    • 1-inch cinnamon stick
    • Salt to taste

    For the Biryani Masala:

    • two large onions, thinly sliced
    • two tomatoes, finely chopped
    • 1/2 cup cooking oil or ghee
    • one tablespoon of ginger-garlic paste
    • one teaspoon of red chili powder
    • one teaspoon of biryani masala powder
    • 1/2 teaspoon turmeric powder
    • Fresh coriander and mint leaves for garnish

    Instructions:

    Marinating the Mutton:

    • In a big bowl, blend the mutton pieces with fresh yogurt, turmeric powder, ginger-garlic paste, red chili powder & salt.
    • Let the mutton marinate for 2 hours, if possible, overnight in a fridge.

    Cooking the Rice:

    • In a large pot, bring water to boil and add soaked basmati rice.
    • Add bay leaves, cardamom pods, cloves, cinnamon sticks, and salt.
    • Cook rice unless it gets 70-80% done. The grains should still have a slight bite. Drain and set aside.

    Biryani Masala Preparation:

    • In a heavy-bottomed pan, heat oil or ghee over medium heat.
    • Add finely sliced onions and cook until they get brown.
    • Put ginger-garlic paste & cook unless the raw smell goes away.
    • Add chopped tomatoes, red chili powder, biryani masala powder, and turmeric powder.
    • Cook unless the tomatoes get soft and the oil begins to separate.

    Layering the Biryani:

    • Preheat the oven to 350°F (180°C).
    • In a big oven-resistant dish, layer half of the moderately prepared rice.
    • Put the marinated mutton on the top of the rice.
    • Sprinkle half of the biryani masala over the mutton.
    • Add the remaining rice and top it with the rest of the biryani masala.
    • Garnish with fresh coriander and mint leaves.

    Dum Cooking (Sluggish Cooking):

    • Seal the dish with aluminum foil or a tight-fitting lid to trap the steam.
    • Place the dish in the oven and cook for 30-40 minutes.

    Serving:

    • Carefully uncover the biryani and fluff the rice gently.
    • Serve hot, garnished with additional fresh coriander and mint leaves.
